What is Hatcho Miso?
- Soybean miso has been produced in Hacchocho (formerly Haccho Village), Okazaki City, Aichi Prefecture since the early Edo period.
- Using only soybeans, salt, and water, the sake is naturally brewed in wooden barrels for two summers and two winters (more than two years).
- Characterized by its rich flavor and unique sourness, astringency, and bitterness, it is perfect for stews and other dishes.
